I'm not a big fan of sausage. But somehow I ended up with a deep freeze full of sausage. Venison and wild hog. I need recipes for all those sausages for folks who don't really like sausage.
Thanks!

Cabbage and sausage.
Use a vegetable steamer. 1 head of cabbage @ 1 link of sausage about 20 inches long 1 large white onion
Put some water in the bottom of the steamer. On the steamer rack put about 1/2 of the cut up cabbage. On top of the cabbage sprinkle some salt ( fair amount to taste) Spread about 1/2 of the cut up onion (not cut too small) Put about 1/2 of the sausage cut about 1/2 inch thick on top of the onion.
Now start layer 2 with the other 1/2 of the cabbage and reapeat steps above.
Get the steamer working and steam until done 25-40 minutes depending on how crisp or soggy you like your cabbage. I lean more towards the 40 minutes ....wife likes it done a little less.
I usually add some black pepper and salt to taste in my bowl. Depends on how much spice your sausage has.

Cassoulet. It's a big white Lima Bean and Sausage and pork chop or chicken thing. Kind of like a gumbo.....smells good, taste better. Google it.....usually calls for duck....but I ain't got none of that. Having it tonight.

There is also 15 bean soup it's a pre-packaged dried bean soup mix (in the dried bean section) just add a little sausage to that. Also,....there is also the one and only "Red beans and rice" which typically contains sausage. A lot of people use red kidney beans but I prefer actual dried red beans....the are harder to find, at least in my local area..
Hint: for either of these it may be advised to pre-boil the sausage separately if it's too greasy or has too much smoke on it prior to putting it in your beans.

Cappy should have some recipes for your sausage delima.
About the only thing I've got left is chicken and sausage gumbo.
